Our Winery

Our winery was established in 1998. Here, you will find the third generation of family wine crafters.

 The atmosphere inside our winery is serene and tranquil because all of our employees love and

 take pride in what they do. It is a true honor for us to be able to produce the purest quality of

wine that we do for public consumption worldwide. Although our facility is all modern and state

of the art, our wines are made from traditional ancient recipes dating back 2000 years.

Our Specialities

We specialize in making several types of wines. Our plum wines and 3 different types of lychee

 wines are our best sellers. All are made with real fruit juice. They have no artificial flavoring,

coloring, or preservatives. The plum wines have no sulfites added. This is a rarity today in the

wine industry. Most of the other brands of plum wines on the market today are either grape

wind base with artificial coloring, flavoring, preservatives, and sulfites added or white wine with

the same artificial flavored nonsense. That's not what we consider real plum wine here at Zen

Village, and neither should you.
Our lychee wines are also made with real lychee juice using a cold fermentation process. Simply

put, cold fermentation is a process of fermenting the wine at a cooler than normal room temperature.

Control of the fermentation temperature is the key to producing quality wines since the temperature

naturally rises during the fermentation process. This is our preferred method for making natural

fruit wines: We ferment the lychee wines between 50F - 59F (10C - 15C). This process takes

longer for the wine to ferment but allows us to retain all the natural characteristics of the lychee

fruit with it's full flavor and aroma. We have been using this process for a long time and have

perfected it. We have numerous gold and silver medals to prove it too, including a recent

international gold medal from "THE BORDEAUX WINE AND SPIRITS INTERNATIONAL COMPETITION"

awarded to our plum wine.

Best Weather Condition to Produce Perfect Wines

The Winery is located in the city of Conghua. We are the number one leading fruit winery in all of

southeastern China, a perfect region of the planet for growing fruit for wine. With no extreme hot

or cold days, it has the best combinations of environment that one could dream of. The altitude,

rainfall, humidity, rich soil conditions, and temperatures make it a paradise for growing fruit

naturally, all year round.
All the fruit and ingredients we use to make our wines are grown locally, literally at our fingertips.

They are some of the finest and freshest ingredients you will find anywhere. At our dispose, we

have 100,000 acres of green plum (Ume) fields, and 300,000 acres of lychee field. The honey

we use for our honey wine is collected locally from over 80,000 bee hives. For all you honey

lovers out there, the local lychee honey that is gathered from our bees that frequent the lychee

field is outstanding and one of the truest pleasures you can ever give your taste buds. We

personally guarantee this. Very importantly, our wine company is on the top of the honor list

for the National Agriculture Department of South Eastern China. We are also key board members

for the Chamber of Commerce Department of Wine for the whole southern region of the country.

This is a major accomplishment for us and no easy task. We are constantly working with

Technology University of Southern China to further perfect the process of wine making as new

technological advancements become available. Even though we have the best wine in our

categories, it never hurts to try and improve on perfection.

Ume and Umeshu(Asian Plum Wine) /Red Plum Wine (Plum Wine with Perilla)

          

What is Ume?

Ume is most commonly known as the Japanese plum. The term "ume" means "plum", but

actually the fruit is most genetically close to an apricot, and not a plum at all. In May and

early June, the ume fruit fall from the tree, yet they are still green. Left alone, they eventually

ripen and become suitable for eating and wine making. However it is the green fruit that is

used for medicine. It only make perfect sense that we would use one of the natures most

perfect fruits for use in our wines.

Benefits of Ume:

Traditionally, ume has been used in the following ways:
1. For gastrointestinal ailments - stomach aches, constipation, indigestion, food poisoning,

motion and morning sickness, other forms of nausea, and lack of appetite.
2. For antibiotic purposes - antiseptic, anti-dysentery, anathematic, anti-typhoid, and anti-cholera.
3. For fatigue - to fight the harmful effects of excess lactic and pyruvic acid, the normal

products of energy production in the body.
4. As an antioxidant
5. Also for many miscellaneous other purposes - Anemia, headache, acne, heatstroke, hangover,

or any problem due to excess alcohol consumption. Cold and flu, natural food preservative, and

post surgical recuperation.
Of all the above, there appear to be three main uses: for gastro-intestinal upset, fatigue, and to

correct metabolic imbalances. In the macrobiotic community, ume is a very popular source of alkalinity.

Metabolic disturbances are common among vegetarians who ingest large quantities of acid-forming

foods, such as grains and nuts, without balancing with enough fruits and vegetables. Ume is a quick

and excellent source of alkalinity. Relatively small quantities of ume added to a macrobiotic diet will

do amazing things to the acid-alkaline balance.
Fatigue involves the build up of lactic acid during exercise. This mild form of acidosis can usually

be quickly converted by exhaling deeply and by drinking highly alkaline drinks. The use of ume

under this circumstance is ideal. Should the acidosis become severe enough to produce nausea

or fainting, ume concentrate might be one of the only logical treatments.

Ume Contains Many Concentrated Nutrients

The primary ingredient of ume is citric acid. Comparison tables consistently place ume at the top

of the list in terms of citric acid and phosphoric acid concentration. It is very high in important

minerals: Calcium, iron, phosphorus, magnesium, manganese, germanium, and potassium.

No other fruits anywhere, except lemons, even come close to having concentrations of these

nutrients equal to ume. It takes just 2 parts of ume concentrate to neutralize 100 parts of sugar -

a strongly acidifying foodstuff. Ume also contains therapeutic amounts of picric acid, catechin,

and pectin.
 A joint Japanese-American study carried out in Hawaii, in 1982, found indications that the use of

ume by Japanese women was responsible for a lower incidence of intestinal cancer.

What is Lychee?

The lychee tree is a tropical and sub-tropical fruit tree native to southern China. It is also commonly

found in southern Taiwan, Indonesia, South Africa, Northern Vietnam, India, Philippines, Bangladesh,

and Pakistan, to name a few. In recent years in the United States, California, Hawaii, Texas, and

Florida have also produced large quantities of lychee fruit. Florida alone produces about 2 million

pounds of lychee fruit annually. This is where our corporate headquarters is located. Lychee is also

spelled litchi and is the sole member of the genus litchi in the soapberry family Sapindaceae. The

average size of a single lychee fruit is 1.5 - 2 inches. The inside consists of a layer of sweet

translucent white flesh with a texture similar to that of a grape. In the middle of a lychee fruit

there is a big black seed that is hard and not edible

Nutrition Benefit of Lychee:

Lychees are extremely rich in Vitamin C, about 40 percent more than oranges. Just 3 of these

small fruits would be sufficient to provide an adult with their entire recommended daily allowance

of Vitamin C. They are also rich in copper and potassium, as well as having much higher levels

of beta carotene than carrots. Lychee fruit is extremely low in cholesterol, sodium and saturated

fat. They are jammed packed with anti-aging and disease fighting antioxidants. Lychees are

known to increase energy levels within the body. They also increase the fluid levels in the body

which boast our diabetic and digestive systems. They help to thin the blood and prevent dangerous

clots, which mean they are very beneficial in the prevention of heart disease and strokes. Lychees

are good sources of fiber and carbohydrates. All these health benefits make lychee suitable for

maintaining optimum health and weight loss. Medical research has also shown that lychee fruit

may provide impressive anti-breast cancer properties. A study published in Toxicology and Applied

Pharmacology show that lychee fruit slows the formation and progression of breast cancer through

several mechanisms including apoptosis.

Crucial Lychee Tree Facts

Most lychee trees will die if they are exposed to a hard freeze below 30F degrees for more than

8 hours. They do however require some chilling in the winter to produce fruit. A lychee tree needs

approximately 150-200 hours of continuous cool weather under 68F degree in the winter for the

trees to grow bloom shuts instead of leaf flushes; otherwise they will not produce fruit. Lychee

trees also need full sun. Shaded areas of the tree will rarely produce fruit.
In our personal experience lychee growers who focus more on quality rather than profitability,

produce the best lychee fruit in the world. Due to our unique climate conditions, Conghua is the

lychee growing capital of all Southeastern China. If lychee fruit is properly harvested at the peak

of ripeness, it is delicious, sweet and fragrant. Taste statistics indicate that slightly over 90% of all

people who try properly ripened and harvested lychee fruit find the experience delightful.
Lychee fruit does not ripen after picking, unlike other fruits such as bananas, mangoes, tomatoes,

and avocados. If lychee fruit is picked too early, it is usually bitter and unpleasant tasting. Often

some commercial lychee growers pick the fruit prematurely to rush it to the market place when the

wholesale price is higher. At Zen Village we would never accept that. All the Lychee fruit we use is

very carefully looked over and highly scrutinized for only the ripest and sweetest fruit to be used

in our wines. Our local suppliers of the lychee fruit we use in our wine leave a little piece of the

stem on each fruit. We then take the stem off right before we start to sanitize the fruit for use.

The reason being sometimes when the stem is removed from the fruit earlier, it tears the skin

of the lychee fruit and speed up the aging process of the lychee, possibly spoiling it.
