Partial Transcript: "On Tap Spotted Cow.
Hi, Im James Knott and this is your Better Beer Authority. Today our tongues head to Wisconsin for a taste of Spotted Cow. The New Glarus Brewing Company in New Glarus, Wisconsin has been brewing beer since 1993. Spotted cow is one of eight year-round offerings from the brewery and its only available in Wisconsin.
It is 4.8% alcohol by volume - unfiltered and cloudy. The brewery says you can taste a little hint of corn as a tribute to the Wisconsin farmers and claim on their website that the corn is not an adjunct, AKA unnecessary, ingredient used to cut cost. They use it to give a local flavor and it is actually more expensive for them than malt because they use so little corn in their product lineup.
Spotted Cow is a cream ale. The name has nothing to do with cream at all. In general, cream ales are brewed as ales with top-fermenting yeast, but are finished with lagering, or cold-conditioning after primary fermentation is complete. The lagering reduces fruity esters and produces a cleaner taste.
In essence, the process is a hybrid of the ale and lager brewing processes.
