California
815
Cabernet Sauvignon
What:
The 2007 California 815 Cabernet Sauvignon blends grapes from our favorite
appellations resulting in an elegant, luscious wine.
Where:
Fruit is sourced from Napa Valley, the Mendocino coast, Paso Robles and Lake
County. Together, these appellations create a balanced, structured wine with supple
tannins, bright acidity and flavors of spicy red fruit and rich black fruit that
are intensified by aromas of currants, cedar and black tea.
Why:
Our 815 Cabernet is named for the August 15th birth of our daughter Lucy during
the 2003 harvest.
Alcohol: 14.3%
Release date: March 2009
2005 Chardonnay, Blend No. 406, Napa Valley
The 2005 vintage is proving to be a stunning vintage for Chardonnay due to the unseasonably cold nights
and warm days during the ripening period. This chardonnay is a blend of two Napa Valley vineyards from
the southern, cooler part of the Valley. Our winemaking style strives to retain the purity of fruit by preventing
malo-lactic fermentation and aging in stainless steel rather than oak. The Hyde Chardonnay exhibits
vibrant aromas of pear and stone fruits with hints of white flowers and spice. The pallet begins with a
finesse of rich fruit and minerality that remains in the mouth to show concentration and depth in the mid
pallet. A balanced but firm acidity in the finish makes this wine a great match with a variety of foods.
Fruit: 100 % Chardonnay
Appellation: Napa Valley
Harvest Dates: September 30 & October 13
Harvest Brix: 24.5 Brix
Cooperage: Stainless steel tanks and 60 gallon drums
Aging Time: 6 months
Alcohol: 14.3%
Release Date: June 1, 2006
Suggested Retail: $18
N A P A V A L L E Y
What:
Our 2006 GOTT Napa Cabernet Sauvignon has silky tannins and a firm structure
with aromas of black currant, tobacco leaf and sweet oak.
Where:
Making GOTT gives us a chance to study diverse Napa Valley appellations, each
with its own micro-climate and soil type. For this vintage, fruit from St. Helena
added softness and red fruit flavors, while fruit from Oakville provided structure
and dark fruit flavors. Fruit sourced from Howell Mountain, where the rocky soils
offer limited yields, added tannins and minerality.
Why:
We are committed to working with growers who share our passion for making
wines that are true to a grape's varietal characteristics. Our philosophy has remained
the same from the beginning: make the best wines from our favorite vineyards.
