Braisin' With Beer
Here's a recipe for delicious beer-braised short ribs-a sure winter warmer-using our own Claymore Scotch Ale. Tastiness verified by the Brian Dunn Home Test Kitchen.
Claymore Beer-Braised Short Ribs
(adapted from Williams-Sonoma)
Ingredients:
4 lb. beer short ribs
3 Tbs. canola oil
2 yellow onions, diced
3 carrots, peeled and diced
2 celery stalks, diced
6 garlic cloves, peeled and sliced
2 cups Claymore Scotch Ale
8 fresh flat-leaf parsley sprigs (optional)
Salt and freshly-ground pepper to taste
Directions:
Season the short ribs generously on all sides with salt and pepper. In a large frying pan, over medium-high heat, warm the oil until almost smoking. Working in batches (do not overcrowd), brown the ribs on all sides (3-5 mins per side). Transfer to a plate. In the same pan, over medium heat, add the vegetables. Cook, stirring occasionally, until softened (about 5 minutes). Season with salt and pepper.
Slow Cooker Method: Transfer short ribs and vegetables to a slow cooker and add the beer. Cover and cook according to the manufacturer's instructions until meat is very tender (about 4 hours).
Oven Method: Preheat the oven to 300 degrees. Transfer the short ribs and vegetables to a Dutch oven and add the beer. Cover the pot with aluminum foil and place the lid on the top. Transfer to the oven and bake until meat is very tender (about 4 hours). Transfer the ribs to a large bowl and cover with aluminum foil. Skim the fat off the sauce. Using an immersion blender, puree the sauce until smooth. Transfer the ribs to individual bowls. Spoon the sauce on top and garnish each serving with a parsley sprig.
Serve immediately and pair with Yeti Imperial Stout. Serves 8.

So Fresh and So Green...
It's finally here, that wonderful time of year when the very first crop of Pacific Northwest hops is harvested and shipped directly to our doorstep overnight so that we can brew our annual, fresh hopped ale.
The fresh, whole cone hops we use to brew our Fresh Hop Pale Ale impart an intensely grassy hop aroma and citrus hop flavor that compliments washed-rind cheeses, grilled trout, bratwurst, and garlic/ginger sweet potatoes.

Malty, Robust, Warming...
This time of year also sees the release of our celebrated winter tradition, Hibernation Ale. A three time medal winner at the Great American Beer Fest, this robust, dry-hopped ale has been warming the spirits of our fans, staff and judges since 1995. Hibernation has a malty richness balanced with a complex hop profile and hearty, warming character. Most enjoyable with aged cow's milk cheeses, grilled beef tenderloin, and apple crisp with ginger ice cream. 8.7% ABV. Available October through January.
Celebrate the return of both Hibernation and Fresh Hop Pale Ale October 8th from 6-9pm in the brewhouse.

I Believe...
Also out this month, Yeti Imperial Stout's sophisticated sibling Oak Aged Yeti. Oak aging gives a subtle vanilla character, rounding out Yeti's intense roastiness and huge hoppy nature. 17 and Counting...
Last month, our Saison-style beer, Colette Farmhouse Ale, won a silver medal in the 2010 Great American Beer Festival judging. The beer won in the French-and Belgian-style saison category, which had 52 entries. This is the 17th GABF medal that we've won in our 16-year history!

The Block is Hot...
Summer is in full swing here in downtown Denver and so are we. Production is up 77% from last year and we're still brewing around the clock to keep up with demand. That said, we had to take a break. Last month we threw a huge block party to celebrate 16 years of awarding-winning craft beer. Despite unseasonably cold and rainy weather the day of the party, over 900 of our fans showed up to celebrate with us! Thanks to everyone who's supported us for the last 16 years. Here's to 16 more!

New Seasonals on the Way...
Yes, we're releasing two brand new seasonal beers this summer.
Rumble IPA is an American IPA with subtle nuance. Brewed with heavy handed additions of Pacific Northwest hops, this beer is gently aged on French and American oak resulting in a wonderful balance of bitterness, caramel sweetness, vanilla, and undertones of pine and citrus. Very inspiring. 7.1% ABV. Available in six packs and on draft.
Smoked Baltic Porter is the sultry sister of a storied style. Brewed with traditional German malts and hops, this dark lager gets its special twist from a hefty addition of Bamberg smoked malt. This smoldering, medium-bodied lager is sure to please. Smoked Baltic Porter is smooth, smoky and dark...mysterious enough yet? 6.2% ABV. Available in 22oz bottles and on draft.

Hoppy Birthday...
Back in the early 90s, Brian Dunn quaffed one of his recently crafted homebrewed beers and thought to himself, "I should do this for a living." Thankfully, he acted on the idea. Brian cobbled together bank loans, savings and seed money from a few allies, quit his day job (at an agricultural development company) and in 1994, Great Divide Brewing Co. was born!
Today we're one of America's most decorated microbreweries, and have helped transform Denver into an international destination for beer lovers. It's been a wild ride full of ups and downs, trials and tribulations...oh hell, what can we say? It's been a blast! Cheers to 16 more years!

To commemorate Brian's epiphany, we're releasing our 16th Anniversary Wood Aged Double IPA. This copper-hued treat is a celebration of everything Great Divide does best. Plenty of malty sweetness provides a backdrop for earthy, floral English and American hops, while French and American oak round off the edges and provide a touch of vanilla. Inspiration in a bottle.
In other beer news, Double Wit returns as our spicy summer seasonal. Unmalted wheat and Belgian malted barley give the beer a light body and straw hue, while coriander and curaçao provide the traditional notes of spice and light acidity. This cloudy, deceptively drinkable creation should be enjoyed without the addition of fruit.

Bursting at the seams...
Because of the ever-increasing demand for our award winning beers and the fact that we're located right in the heart of downtown Denver, we needed to get a little creative about how we expand, so we went outdoors. These three new 300 barrel tanks (that's 10,000 gallons each!) will increase capacity by 50%, plus, they look really cool. Set to be filled with suds next week!

The 2010 Austrailian Beer Awards have been announced and Great Divide cleaned up! Hoss is chopping down the competition these days. It not only won a gold, it was named Overall Champion Lager. Hossome. Both Claymore and Colette snagged silver medals as well. That's right, we're global.

Licking the fat that's good for you and the mold. Embrace the blues and their wandering veins. If I have advice for the novice or the initiate, it would be to spit on low fat cheese, piss on low fat beer. Great Divide Brewing Company was founded by Brian
Dunn in 1994 in Denver, Colorado, USA. When he
opened his microbrewery, it was one of only four in
Denver; by 2007, there were over 90 microbreweries
in the state, second only to California.[1] Three months
after brewing its first batch of beer, it won the first of
the brewery's twelve Great American Beer Festival
and four World Beer Cup awards.[2] By 2007, Great
Divide was ranked by RateBeer.com as the 23rd best
brewery in the world with three of the world's top
100 beers. In December 2008, Beer Advocate magazine
ranked them as the seventh best brewery on the planet.[3]
The brewery
Due to a 45% increase in sales in 2007, the brewery
was forced to expand. In September 2008, Great
Divide opened a new brewery that tripled its
production. At the same time, they changed the art
on all of their labels.[4]
The beers
Great Divide Brewing Company was founded
with the notion of brewing strong beers, which
are defined as having an alcohol content greater
than 7%. Six of the thirteen beers made by Great
Divide in 2006 exceeded this threshold, and one,
Old Ruffian, has over 10.2% alcohol content, which
is twice that of America's top selling beer Budweiser.[5]
"I also think that brewers like to sell the beer that
they like to drink." Dunn said, "And as people who
can and do drink beer all day long, it's obviously
more interesting for us to drink big beers that are
long on flavor and complexity."[5]
When Invesco Field, the home of the Denver Broncos,
opened in 2001, Great Divide's Denver Pale Ale
(DPA) was one of only three craft beers selected to
be sold at the stadium. Dunn indicated that Denver
Pale Ale was selected because it had won more
national and international awards than any other
Colorado beer.[6] In 2000, Denver chef Bill Clifford
made a Braised DPA Lamb Shank for the White
House Tree Lighting Ceremony.[7] In 1997, Great
Divide beer was used in the NBC miniseries Asteroid.[8]
