Our OriginsThe origins of fine wine ... Great winemaking finds its origins through a marriage of vision, passion and patience. More than three decades ago, the Pennachetti family helped to pioneer the cultivation of noble European grape varietals on the Niagara Peninsula with the planting of their first Riesling and Chardonnay vines at Cave Spring Vineyard. In the years since, Cave Spring Cellars has established itself as one of Canada's most acclaimed wineries, earning a reputation for crafting elegant and distinctive cool-climate wines in the heart of Ontario's wine country. We invite you to explore the origins of our fine wines. Our WinesRespected as one of the foremost producers of Riesling in North America, Cave Spring offers an array of wines from this noble varietal from dry to the most concentrated of Late Harvest and Ice Wines. The winery has also forged a strong reputation for its portfolio of exceptional, cool-climate Chardonnays and nuanced red wines, which include Pinot Noir, Cabernet Franc and Gamay. 2006 Riesling Icewine Rated: 90 points Granny Smith apple, spice and zesty tangerine notes are bolstered by crackling acidity in this lively white. There's nice length and definition, finishing with a lingering, mouthwatering impression. Drink now through 2014.
2007 Chardonnay Musqué Cave Spring's Musqué is one of the most delightful local whites I've ever tasted. It would rock anyone's world - novice drinkers and snobs alike. Expect some Chard richness, some Muscat spiciness and a ton of jazzy liveliness. It's a magical summer sipper. Mamma Mia in a glass. Have your first bottle with a lazy brunch. Other possibilities are anytime you are in the mood for fun. Mastercard would surely call this wine priceless.
2006 Riesling Estate Crisp and bright with lively acidity, Riesling is a great foil for rich flavours.We love this Ontario pick's clear citrus aromas and fruity tanginess, followed by a touch of sweetness.
2006 Chardonnay Estate ... From the same producer comes another deliciously balanced wine.This mediumbodied white, available as a permanent "essentials" listing through Vintages departments in Ontario, represents a stylistic change from previous vintages of the wine. Malolactic fermentation, a post-alcoholic fermentation that yields a soft, buttery wine, was inhibited, leaving the wine's malic, or crispy-apple, acidity intact.The result is a flintier, zippier Chardonnay that still displays a toasty, tropical-fruit bottom.
2007 Riesling Estate ... I mention this to underscore that one of my top picks today was up against plenty of competition when I last tasted it. Cave Spring Riesling Estate 2007 from Niagara was lined up next to a panoply of about 90 wines from around the world, many of them very good, which are being released this morning through Ontario Vintages stores. Yet the Cave Spring was probably the best value in the room. Certainly it was the best white-wine value. Don't expect easy-drinking gobs of fruit and oaky-vanilla sweetness from this delicate riesling. This is one of those brooding, intellectual elixirs that whispers rather than shouts. Close your eyes and for a second you might guess it to be from Germany. Classic Mosel Valley characters of ripe peach, kerosene (in a subtle but good way) and minerals dance on a thick, mouthcoating texture that remarkably manages to finish dry, with lively, balancing acidity. It's a great example from the great 2007 Niagara harvest and would be a good white choice for Easter turkey.
2007 Riesling CSV Rated: 2 1/2 stars This leading Canadian producer has recently begun distributing its wines in the Mid-Atlantic region. The Riesling Estate and Riesling Niagara are most widely available.The single-vineyard CSV, the winery's top bottling, is dry, delicate and fine, with hints of talc and exotic fruits.
